Pizza primavera

Made a spring-time pizza yesterday. Even C liked it, and ate everything we gave him, which is pretty rare right now.

Simple Pizza Dough

Mix 1 packet dry yeast (2 1/4 tsp if you have bulk) in 1 cup warm water, and let it sit for a few minutes, until it gets bubbly.

In a large bowl, combine 2 cups flour, a pinch of salt, and two pinches of sugar. Add the yeast/water mix into the flour, along with 2 Tbsp of oil. Mix until the ingredients are well-incorporated, then dump onto a floured counter and knead the dough for several minutes. Pop it back into the bowl, then put in a warm place and let it rise for an hour or so. Roll it out onto a baking sheet (use some grease or flour, or it’ll stick – I like to use cornmeal) and stretch it to your desired thickness.

For our toppings, I sautéed up some more peas, scapes, chard and a handful of mustard greens, and threw some fresh oregano on top, all fresh from the garden. Add a bit of tomato sauce, a couple mushrooms, and some mozzarella, and we have a winner. Bake it at 400 F for roughly 15 minutes, then slice it up and dig in.
