Grilled chicken and potatoes

I finally busted out the grill last night. It’s been buried under the accumulated junk in the garage from when we moved in last year, but I figured this was a good time to set it free.

We bought a half chicken at the farmer’s market last week, along with some new potatoes, which ended up being a nice pairing. For the chicken, I was going to do a dry rub, but ended up doing more of a wet, pasty rub. What I used was: olive oil, tomato sauce, Worcestershire sauce (does anyone really know how to pronounce that?), salt, pepper, mesquite seasoning, Tabasco sauce, and some honey. I didn’t measure anything; use your own judgment. (Sorry for anyone who actually looks for real recipes. Since I’m more of a wing-it style cook, I rarely measure anything, so I can’t really tell you how much of what I used) I put some slits in the skin, and rubbed this inside, outside, and all around, then let it sit for a couple hours.

While that was resting, I boiled the potatoes for about 15 minutes, then cut into chunks. While they were cooling, S fried up a few slices of bacon for me. When the bacon was finished, I diced that, then fries the potatoes in the bacon fat. Finally, I put the bacon bits and some fresh parsley in with the potatoes.

The chicken was grilled for about 15-20 minutes per side over medium to medium-low heat. Turned out nice – the skin was a little charred and the inside was tender and moist. Good meal to eat outside on the porch, even if it was approaching 9 o’clock by the time we finished. Sadly, that’s kinda typical now. I remember the good old days when dinner was at 6, maybe 6:30… I guess what matters is that dinner is still present and good, regardless of the time.

No I didn't eat the whole thing.
